Cauliflower Pizza

Cauliflower. Either you like it or you don't. I do. Most of my family. Not. So. Much. And I get a lot of it in my produce boxes. Roasted, mashed, as rice, or just raw. But now. A new way for the WHOLE family to eat it.....pizza. Was very surprised it passed. And children asked for more.

Cauliflower Pizza Crust

1 head of cauliflower...
1/2 cup water
1 egg
1/2 cup freshly shredded parmesan or asiago cheese
1/4 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
1/8 tsp Himalayan salt

1. Place cauliflower head (slightly chopped) in food processor. Pulse till finely chopped.
2. Put chopped cauliflower and water in saucepan. Simmer with lid on for about 30 minutes or till mushy.
3. Allow to cool. Then place cooked cauliflower in a piece of cheese cloth or fine linen dish towel. Drain ALL liquid out of mash. (You will be very surprised how much comes out.)
4. When drained place in a bowl and mix with all other ingredients.
5. Line baking sheet with parchment paper and form your crust.
6. Bake at 375 for about 20 minutes or until slightly browned.
7. Top with your favorite toppings and bake again till done.

(Cheese pizza for picky eaters. Veggie pizza with spinach, tomatoes, sweet peppers, purple onion, artichokes, goat cheese and fresh basil.)

Turkey Stuffed Sweet Peppers

Italian Stuffed Peppers

3-4 large sweet red peppers
1 lb ground turkey
1 onion chopped...
3 fresh garlic cloves minced
1 tsp basil
1 tsp oregano
1/2 chopped tomatoes
1 cup chopped arugula or spinach
1/2 cup diced fresh mozzarella
Himalayan salt to taste

1. Brown turkey with onions and garlic. Drain fat when cooked through.
2. Add spices, tomatoes, arugula and salt to taste. Simmer 5-10 minutes.
3. Core and remove seeds from peppers.
4. Layer meat and cheeses into peppers.
5. Cover and bake at 350 for 30-45 minutes. Top with cheese and bake additional 5 minutes.

Chewy Peanut Butter, Chocolate Chip, Oatmeal Cookies

Rainy days call for cookie making. Have I mentioned this family loves peanut butter?

Chewy Peanut Butter, Chocolate Chip, Oatmeal Cookies

1/4 cup organic butter...
1/3 cup organic peanut butter
1/2 cup milk of choice
1/4 cup local honey
1/2 tsp baking soda
1 tsp vanilla extract
1 free range egg
1/2 tsp Himalayan salt
3/4 cup whole wheat flour
1 1/4 cup old fashion oats
1/2 organic semi-sweet chocolate chips

1. Whip together everything but chocolate chips.
2. Stir dough with chips and place on cooking sheet and bake at 350 about 10 minutes.

Dark Chocolate Almond Pie

Have I mentioned my love for almonds and dark chocolate? One tiny slice is ALL that you need. I made my almond meal crust. Baked till slightly brown. Then poured the chocolate into the crust. Chill for 4-6 hours before serving.

Dark Chocolate Almond Pie

2 cups organic dark chocolate chips...
1/2 cup unsweetened almond milk
1/2 cup organic heavy whipping cream
2 tsp local honey
1 tsp almond extract

Melt chips and slowly add other ingredients. Pour into almond meal crust and chill.

Serve with fresh whipping cream, sweetened with honey and vanilla extract and strawberries.

Strawberry Pie

Have you gotten your local strawberries? If not your missing out. I might have already been 3 times.

The almond meal crust was the perfect accessory. For the filling I used my strawberry chia seed jam. Layer strawberries with jam and serve with some fresh whipped cream sweetened with honey.

Almond Meal crust

1 1/2 cup almond flour
3 tbsp organic butter or coconut oil softened
1 tbsp local honey

Mix together and spread into a pie pan to form crust. Bake at 350 till slightly brown. About 15-20 minutes.

Macaroni and Cheese


Let's face it. If you have young children. Macaroni and cheese is a easy "go to" staple. And it's not meant to be low fat. Or complicated with ingredients. It's just meant to be creamy and comforting. I am not speaking from experience or an...ything

The. Simpler. The. Better.

This is our version:

Macaroni and Cheese

1 16 oz box of organic whole wheat noodles (we like penne)
1 8 oz block of sharp cheddar cheese freshly grated
1 stick of organic butter
2 tbsp whole wheat flour
2 cups of organic milk of choice
1 tsp Himalayan salt
Few shakes of garlic powder

Cook pasta according to directions. Drain and set aside. In a large sauce pan melt butter and whisk in flour. Add milk slowly. Bring to a low simmer. Slowly add cheese, continually whisking till smooth. Add salt to taste and a few shakes of garlic powder if desired. Add pasta and mix well. Allow to sit for a moment for cheese sauce to stick to noodles before serving.

Carmel Sauce


I am usually not a huge carmel fan. I like it mixed with other things but not just carmel.

This I could drink.

We had baked apples with dinner so in a desperate need of a sweet, I topped plain organic Greek yogurt with the baked apples ...and drizzled the hot carmel sauce on top. It was amazing.

The possibilities are endless to what can be topped with this deliciousness. And not mention how much better than the store bought. My mouth waters thinking about a fresh honey crisp apple dipped in this.

Carmel Sauce

1 cup organic cane sugar
1/4 cup water
1 stick organic butter
2 tsp pure vanilla extract
1/2 cup organic whipping cream

1. Bring sugar and water to a boil. Careful not to burn but till edges are a light brown color and it looks crystal like.
2. Add butter and vanilla and again bring to a boil. Mix well. And allow to boil till slightly reduced.
3. Add whipping cream and boil again.

Almond Milk


We drink a lot of almond milk and I cook with a lot of almond flour. And almond flour is expensive!! So, this is a super inexpensive, easy, no brainer for me.

Homemade Almond Milk and Almond Flour

1 cup whole plain almonds
3-4 cups of wa...ter

1. Soak almonds overnight. I used a small mason jar.
2. Depending on your taste preference (I variate, but it's always around 3 1/2 cups) add water with almonds and in a vitamix blender or other high power blender, mix water with almonds.
3. Pull cheesecloth or a fine linen dish towel over a bowl and pour liquid through cloth. Squeeze if needed till your cloth if full of meal. That's your milk!
4. Line baking sheet with parchment paper and pour almonds onto paper. Bake at 350 for about 10 minutes or till slightly dried out. Store in freezer till ready to use. (Makes about 2 cups)

French Onion Soup

Hot or cold. Summer or winter.

I  LOVE soup.

French onion is not only delicious and easy to make. But low on the calories too.
...
I topped mine tonight with Ezekiel bread because it was the only bread I had available. Was DIVINE.

French Onion Soup

4-5 sweet onions sliced
5 tbsp organic butter
3 garlic cloves minced
3/4 cup red wine (I always just use whatever we have on hand)
4 cups or preferably homemade chicken or beef stock. Or organic free range.
1 tsp Himalayan salt
1 tbsp fresh thyme chopped

1. I like to make in a cast iron soup pot. Melt butter and add onions and garlic. Cook about 30 minutes. Stirring frequently till slightly caramelized.
2. Add wine, stock, thyme and salt. Simmer on medium for about 30-45 minutes.
3. Serve in ramekins topped with crusty bread and freshly grated gruyere cheese. Put in oven to toast bread and melt cheese. Serve immediately.

Mexican Pork Butt

Never. I mean NEVER. Allow your husband to go to Costco by himself. He will come home with enough meat to feed a family of 115. Which I did by the way meet someone the other day who had 115 grandchildren. Not including great. I haven't been... able to quit thinking about it. He was Amish. But that is beside the point.

After he smoked about 10 pork butts, I have had to make other things with the meat. Tonight's was Mexican Pork. I put in a crock pot and heated on low with homemade taco seasoning and homemade salsa with water. We made quesadillas, tacos and I had a salad.

Lots of purple cabbage in my produce box. Sliced it very thin. Topped with pork, avocado, black beans with corn, sweet peppers, cilantro, homemade salsa, plain organic Greek yogurt and some honey lime dressing (3 tbsp olive oil, juice of one lime, 1 tbsp local honey and Himalayan salt).

Applesauce Muffins

Have you made the apple cider? If so this is a great recipe to use the apples than you strained off the top! With just a few ingredients, turn that applesauce into a super easy breakfast or snack.

Applesauce Muffins

1 stick of softened o...rganic butter
2 eggs
1/3 cup local honey
3/4 cup applesauce (if no seasoned add 1/2 tsp cinnamon)
1 tsp baking powder
1 tsp pure vanilla extract
1 3/4 cup whole wheat flour
(Nuts or finely chopped apples optional)

I topped mine with a butter, cinnamon, cane sugar drizzle when slightly cooled after baking)

Mix all ingredients and bake at 350 for about 20 minutes.

Broccoli Casserole

Eat your broccoli. Eat your broccoli. EAT YOUR BROCCOLI.

For some it's a act of congress. Help ease the pain with this easy and flavorful broccoli dish.

1 bunch (3 small heads) of broccoli
1 cup plain organic Greek yogurt...
1 cup freshly shredded sharp cheddar cheese
1 free range egg
1 small sweet onion
1 fresh garlic clove
1 tbsp olive oil
2 tbsp organic butter
Himalayan salt to taste

1. In food processor pulse raw broccoli till desired consistency. I like finely ground.
2. In sauté pan. Heat oil and add chopped onion and minced garlic. Cook till tender.
3. Mix broccoli with cooked onions and all other ingredients but butter.
4. Grease a baking pan and pour broccoli mixture in. Top with melted butter.
5. Bake at 350 for 30 minutes.

Carmel Oatmeal

With less than a teaspoon of homemade carmel sauce, my oats were taken to the next level.

Oatmeal, fresh apple, cinnamon, nutmeg, homemade carmel sauce, raw goats milk.

Make some today!!!

Roasted Cream of Tomato Soup

Maybe you have a few tomatoes left in your garden? Or maybe you can get a few more at the farmers market? Either way. Make this with fresh tomatoes and enjoy it with a hot grilled cheese this rainy weekend!

Roast Cream of Tomato Soup

12 w...hole fresh tomatoes quartered
2 tbsp olive oil
1 cup fresh basil leaves
2 cups of homemade or free range chicken stock or vegetable stock
1/2 cup organic half and half
4 fresh garlic cloves minced
1 tbsp local honey
Himalayan salt and pepper
(If feeling spicy add a few hot pepper flakes)

1. Season quartered tomatoes with salt and pepper. Drizzle with olive oil and roast at 425 till slightly crispy. About 20-25 minutes.
2. In a large stock pot sauté garlic in olive oil till tender.
3. Add tomatoes and juices to garlic.
4. Add stock to pot. Cover and simmer for about 10-15 minutes.
5. Add honey and chopped basil. With a immersion mixer or blender, purée soup.
6. Add cream slowly and season with salt and pepper. Simmer for about 10 minutes.

Garbanzo Bean Salad

Get back on track after a weekend of fun. Make this and eat for lunch or serve on top of grilled chicken for dinner. Easy to pack and would be amazing as a appetizer with some chia chips. Anyway you make it, it will be enjoyed!

Garbanzo Be...an Salad

1 can or box of garbanzo beans rinsed and drained
1 tomato chopped
1 cup fresh baby spinach chopped
1/4 cup feta cheese
1/4 cup fresh basil chopped or a few shakes of dried basil
1 tbsp of fresh oregano chopped or a few shakes of dried oregano
Juice of 1 lemon
1 tbsp olive oil
Himalayan salt and pepper to taste

Toss all together. Chill slightly or eat immediately.

Pumpkin Butter

I am proving the white girl tradition and making all things pumpkin this fall.

All Natural Pumpkin Butter

1 can organic pumpkin purée
1/4 cup all natural apple juice (I used my homemade apple cider)...
1/2 cup local honey
2 tbsp all natural maple syrup
1 tbsp cinnamon
1/2 tsp nutmeg
Juice of 1 lemon (good for preserving)
1 tsp pure vanilla extract
Himalayan salt to taste

Mix all together in pot and simmer on low for about 1-1/2 hours. Store in fridge.

Amazingly good on Ezekiel cinnamon raisin bread/muffin.

Chicken Soup

I believe in the healing power of healthy foods. I believe in the comfort of healthy foods.

I also believe that the ONLY way to make a hearty flavorful chicken soup is with a WHOLE chicken. When you boil a whole chicken, it not only gives... the best flavor with a all natural chicken broth. But all the good nutrients from the bones and caucus are in the broth. That is what makes chicken soup healing!

Chicken Soup

1 whole organic free range chicken (about 5 lbs)
1 onion chopped
4 cups of fresh chopped veggies (I like celery, carrots and mushrooms)
5 fresh garlic cloves chopped
1 tbsp olive oil
3 cups of fresh frozen veggies of choice (I like corn, peas and Lima beans)
10-12 cups of water
Small handful of fresh thyme
3 fresh sprigs of rosemary
2 bay leaves
1 1/2-2 cups of dried noodles of choice (I prefer a organic whole wheat egg noodle or rice noodle)
Himalayan salt and pepper to taste

1. Boil chicken in water in a large stock pot till cooked through.
2. Remove chicken and allow to cool.
3. Heat olive oil and sauté fresh veggies with garlic till tender.
4. Add all veggies to chicken stock. (Fresh and frozen) and herbs.
5. Pull meat off chicken bones and add to broth.
6. Simmer on medium for about 1 hour.
7. Remove all herbs sprigs and season with salt and pepper.
8. Add noodles and simmer another 20-30 minutes.
9. Garnish with fresh parsley if your feeling fancy.

Enjoy the healing qualities of a comforting soup! Safe the chicken caucus and make more broth in a crock pot. Will share this next.

Chicken Broth

So if you made the soup......save the caucus. Or if you roast one or whatever. Throw it in a crock pot filled with water. Cook on high for about 6-8 hours. (Or overnight). I sometimes get fancy and add onions or carrots or celery. This time was basic and basically just bones, leftover herbs, and some Himalayan salt. I never get all the meat off the chicken. Most. But not all. And totally don't want to waste.
If your like me, I use lots of chicken broth, this is not only cost effective, (I always buy whole free range chickens when on sale and freeze for later. So this one was about $6. I think I have gotten my money's worth) but once again healthier than store bought or granules. And come on. SUPER SIMPLE!!!
I had about 3 quarts with this chicken. Stores in fridge. Or freeze in one cup servings.

Bulletproof Coffee

If you are a coffee lover. Then this is must. It's not only divine, but healthy for you......say what???

BULLETPROOF COFFEE!!

The ticket is the grass fed butter (Kerrygold is what I use. MUST be GRASS fed cows. Not just organic. It cont...ains carotene and many vitamins not found in organic butter) and organic Virgin coconut oil. This combo with coffee with jump start your body completely naturally and start the good fat burning. Also leaving you completely satisfied. But DO NOT skip breakfast!!

The bonus is that it tastes like a expensive latte.

1 cup of a strong good quality coffee
1 tbsp organic virgin coconut oil
1 tbsp grass fed butter
Vanilla creme liquid stevia drops
(I also like to mix some Fall like seasoning in with my coffee grounds before brewing. Cinnamon, cloves and nutmeg)

With a immersion blender mix together and enjoy. (Don't just plop this butter and oil into your hot coffee. It will just be a oily mess) Just one cup will totally satisfy you, but leave you wanting more tomorrow!

Stuffed Goat Cheese Pesto Chicken with Pesto Cream Sauce

New week. New goals. Don't we all need a refresh??? Well....this meal might look like it doesn't fall into that category. But it does.

Do you remember the freezer basil pesto I made a while ago. I am pret...ty sad that it's almost gone. And will be making another batch with the last bit of basil plants I have. But this was a great meal to make with it!

Goat Cheese Stuffed Chicken with Basil Pesto and Basil Pesto Cream Sauce

4 free range chicken breast
About 1/4 cup basil pesto
1/4 cup fresh goat cheese
1/2 block organic cream cheese
Himalayan salt and pepper to taste

With a meat mallet, flatten chicken out. Stuff with cheeses and basil pesto. Close with a tooth pick to seal in cheese. Season with salt and pepper

Basil Pesto Cream Sauce

2 cups of organic milk of choice or organic half and half
2 tbsp whole wheat flour
1 cup freshly shredded mozzarella cheese
1 tbsp basil pesto
Himalayan salt to taste

1. In a large sauté pan. Heat 2 tbsp olive oil. When warm lay chicken in pan and brown on all sides.
2. When done, put in oven safe dish lightly greased with olive oil and cook at 350 till done (about 15 minutes). Then turn on broiler and slightly brown top of cheese.
3. In same pan that you cooked chicken (there will be oil and chicken remnants) add 2 tbsp of flour. Whisk. Slowly add your milk. Whisking. Add basil pesto.
4. Allow milk to come to a slow boil. Careful not to burn. Then add cheese.

Serve with whole wheat pasta or zoodles (zucchini noodles). I also added baby Bella mushrooms and sweet red peppers. I also served my zoodles tossed in basil pesto opposed to the cream sauce. And added freshly grated asiago cheese.

Pumpkin Whole Wheat Bread

Last night on Andy Cohen, I couldn't help but chuckle when he said he was already over pumpkin. And that women were to blame for that. I guess we all get excited for the changes of the season and pumpkin everything. I sure don't care.

I LOVE pumpkin.

But did you know that pumpkin bread is one of the most unhealthy "fall foods"???? It's true. Full of sugar. Most recipes call for about 2-3 cups of sugar. Try my version. Just as good. Just not as bad for you

Whole Grain Pumpkin Bread

3/4 cup organic pumpkin purée
1 free range egg
1/3 cup organic milk of choice
1/2 cup softened organic butter or coconut oil
1/2 cup local honey
1 tsp baking soda
1 1/2 cups whole wheat flour
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/2 tsp Himalayan salt

Mix all wet ingredients. Add spices. Then slowly mix in flour. Pour in a greased loaf pan (sprinkle with pumpkin seeds if desired) and bake at 350 for about 45 minutes. Allow to cool before taking out of pan.

Tropical Oatmeal

Tropical Oatmeal

Oatmeal, bananas, fresh pineapple (really good to sweeten your oats) unsweetened shredded coconut, unrefined virgin coconut oil, chia seeds, almond butter and a little local honey if needed.

Cauliflower Potatoes

Cauliflower "rice" and cauliflower "potatoes" are delicious to me.

Not. So. Much. My family.

After a friend (Rebecca Bibb) said she mixed and her family didn't even notice. I couldn't try fast enough.
...
1 head of cauliflower
2-3 organic white potatoes
1 fresh garlic clove
1-2 tbsp organic half and half
1/4 cup organic butter
Himalayan salt and pepper to taste

I chopped the cauliflower head in food processor. Added it to the pot of peeled and diced potatoes with the fresh garlic clove and covered with water. Cook till potatoes are done. Drain all liquid. Mash with hand masher or electric mixer with half and half and softened butter. Season with Himalayan salt and pepper.

No one will notice. And dang good!!

(This was roasted chicken, tri-color carrots and sautéed bok choy)

Zoodle Lo Mein

I wish I could buy each of my followers a Paderno Spiralizer. I am pretty sure there is NOT one person that would not agree that it rocks.

Tonight's zoodle lo mein did not disappoint. AND there no bloat, swelling, or guilt from the huge p...late of noodles consumed.

Sauté fresh garlic and fresh ginger in sesame oil. When tender, add hard veggies first, so they can cook longest. Adding the zoodles last. I did carrots, sweet peppers, bok choy and zoodles. Use aminos, tamari or a good quality soy sauce for seasoning.

1 cup strawberries finely chopped or pulsed in food processor
1 banana...
1/2 cup unsweetened shredded coconut
2 tbsp chia seeds
1 free range egg
1/4 cup organic plain Greek yogurt
1 3/4 cup whole wheat flour
2 tbsp softened organic butter or coconut oil
1/3 cup local honey
2 tsp pure vanilla extract
1 tsp baking soda
1 tsp baking powder
1/2 tsp Himalayan salt (optional)

Beat all ingredients together and pour in a greased loaf pan. Bake at 350 for 30-45 minutes or till done.

Grilled Balsamic Green Veggies with Honey Goat Cheese and Whole Wheat Orzo



 Grilling veggies is a double score for me, husband takes care of most of meal.

One of the simplest and most delicious marinade for veggies to me is olive oil, bal...samic vinegar, honey, fresh garlic, fresh basil (if in season) and Himalayan salt.

Tonight's vegetables were Brussels sprouts, zucchini and sweet onions. After grilling I added them to cooked whole wheat orzo. Tossed well and added arugula and fresh honey goat cheese. The topped with grilled chicken. It was amazing as a meal or just the orzo as a side. Yummy for lunch too!

Roasted Tomatoes

The name of the game is easy and delicious......enjoy the last of your summer tomatoes with this side dish!

Slice tomatoes. Line on baking dish. Drizzle with olive oil, sprinkle with Himalayan salt and pepper. Top with freshly grated Parmesan or Asiago cheese and a little fresh oregano (could use dried). Bake at 350 for 10-15 minutes. Top with fresh basil and serve.

Banana Split Oats

Banana split oats for breakfast.

I think I will.

Oats, banana, hemp seeds, pecans, all natural peanut butter, chia seeds, a few dark chocolate chips, raw goats milk and drizzled with a little local honey.

Corn and Zucchini Cakes

Kernels off 2 ears of fresh corn (about 1 1/2 cups)
1 small zucchini diced small
1/4 cup chopped green onion
3 tbsp. all Natural corn meal (the Amish make a great mix)
2 free range eggs
1 tsp.  Himalayan salt
2 tbsp. olive oil


1.  Using 1 tbsp. of olive oil, sauté the corn and zucchini with salt till tender.
2.  Place corn in a bowl and allow to cool.  Add corn meal and eggs.  Mix well. 
3.  Heat remaining oil in skillet and pour 1/4 corn mix in skillet to make cakes.  Flipping to cook evenly.  Cover with lid to cook. 
4.  Serve on top of a cucumber and tomato salad and top with fresh goat cheese.

Almond Butter and Blueberry Oatmeal

Almond butter and blueberry oatmeal.

Cooked oatmeal (not instant), tbsp all natural almond butter, sprinkle of cinnamon, drizzle of honey, handful of fresh blueberries, a few splashes of homemade almond milk (unsweetened) and topped with unsweetened shredded coconut and chia seeds

Blackened Red Fish with Cucumber, Cherry Tomato and Grilled Corn Salad

I love light dinners in the summer. When it's hot and humid, who really wants to eat? They satisfy without leaving that heavy feeling. And fish is a great "light" meal!

Blackened Red Fish with Cucumber, Cherry Tomato and Grilled Corn Salad...

4 cups mixed cherry tomatoes quartered (heirloom too)
2 cups chopped cucumber (peel if preferred)
2 ears of corn grilled and corn cut off cobs
1/2 cup white wine vinegar
1 cup olive oil
1 tbsp fresh chopped dill
1 tsp Himalayan salt

Mix salad together and allow to chill slightly. Top with grilled blackened fish.

Lemon Pepper Chicken with Lemon Cream Sauce

Yet another garden meal.....the true beauty of it.....quick and easy. But the even more beautiful........delicious.

Lemon Pepper Chicken with Lemon Cream Sauce

4 organic free range chicken breasts
1/4 cup whole wheat flour...
All natural lemon pepper
1 lemon
2 cups of organic half and half
3 tbsp olive oil
Himalayan salt

1. Pound chicken and season with lemon pepper and Himalayan salt.
2. Dredge chicken in flour.
3. Heat oil in skillet and cook chicken till crispy and cooked through.
4. Take chicken out of skillet and drain oil on paper towel.
5. In same skillet, with leftover oil and chicken drippings, pour half and half into pan.
6. Put zest and juice into the pan with the cream. Whisking to get mixed and warm. Season with Himalayan salt. (About 1/2 tsp).
7. Serve with pasta of choice or I sautéed green beans, yellow zucchini noodles, and a mix of cherry tomatoes with a little olive oil. Sliced chicken. Drizzled with sauce and topped with Parmesan cheese.

ALL NATURAL SUNSCREEN
...
3-4 tbsp organic bees wax pellets
1/2 cup raw Shea butter
1/2 cup organic virgin coconut oil
3-4 tbsp all natural zinc oxide

In a double boiler bring water to a slow boil. In top all bees pellets, Shea butter and coconut oil. Melt slowly. Add zinc oxide and stir well. Keep in a air tight container and use frequently.

To my best knowledge this is around 30-40 SPF.

All Natural Blueberry Mojitos

Some days just call for a adult beverage. A cold. Refreshing. Yummy drink. Especially on hot summer days. With tired, whinny babies:-)

This is a game changer. Forget all those "skinny girl" concoctions.

All Natural Blueberry Mojito
...
1/4 cup water
5 drops of sweet leaf liquid sweetener
6 fresh mint leaves
Small handful of fresh blueberries
1-2 shots of rum
Lime wedge
Ice

Muddle lime, mint and blueberries in a cup. Mix water with sweet leaf. Pour in cup with blueberries and mix. Add rum. Top with ice.

Gazpacho

Can't eat hot soup in the summer? Eat it cold!


Gazpacho


5-6 good size tomatoes ( I used a variety with 2 heirloom)...
2 small cucumbers
1 pepper (I used a green)
1 small sweet onion
2 fresh garlic cloves
A few shakes of red pepper flakes is you like to spice it up
Juice of 1 lime
1 tsp Himalayan salt
Fresh ground pepper to taste



Throw it all In a food processor and pulse till you get your desired consistency. I prefer a little chunky. Serve cold with plain organic Greek yogurt, fresh parsley and avocado. And possibly and grilled cheese:-)

Cherry and Strawberry Smoothie

Fresh cherries are in season and on sale at the grocery! Grab them up. Those suckers are usually so expensive!
Fresh Cherry and Strawberry Smoothie
1/2 cup fresh cherries pitted...
1/2 cup fresh or frozen strawberries
3/4 cup unsweetened almond milk
1/4 cup oats
1 tbsp chia seeds
1 cup ice
Drizzle of local honey

Blend in mixer till smooth.

Grill Pockets

Do you ever make little foil "packets" on the grill? It's one of my favorite ways to make a easy meal in one step. The bonus is that all the natural flavors stay together and make a delicious marinade to cook in.

This was a chicken with v...eggies. My combo of vegetables tonight was cherry tomatoes, sweet onions, fresh green beans, yellow zucchini, fresh chopped garlic and tossed with lots of fresh basil and fresh oregano. I seasoned everything with Himalayan salt and drizzled with olive oil, balsamic vinegar and a little local honey. Customize each packet with everyone's favorite vegetables.

I served with quinoa and poured all the juices from the packet of top

Classic Chicken Salad

Classic Chicken Salad

4 boiled free range chicken breasts
1/2 cup chopped celery
1/4 cup chopped green onions...
3 fresh garlic cloves
3/4 cup plain organic Greek yogurt
2 tbsp local honey
1 1/2 tsp dill weed
1/4 cup craisins ( I used reduced sugar)
1/4 cup chopped pecans
Himalayan salt to taste

1. Pulse chicken with garlic in food processor till desired consistency.
2. In large bowl mix all ingredients with chicken.
3. Chill in fridge for a few hours before serving.

Shepard's Pie

Home cooked cowboy food it what I like to say this is.....we ate this a lot growing up. Still one of my comfort favorites.

Shepard's Pie

1 lb grass feed beef...
1 onion chopped
2 fresh garlic cloves minced
4 cups of chopped fresh veggies of choice (I prefer carrots, celery, corn, peas, zucchini, squash, mushrooms)
1/2 cup water
1 tbsp whole wheat flour
1 tsp thyme leaves
4-6 russet potatoes depending on size
1/2 stick organic butter
1/4 cup organic milk
1 free range egg
1/2 cup all natural sharp cheddar cheese freshly shredded
Himalayan salt to taste
Fresh ground pepper to taste

1. Brown meat with onion and garlic in large skillet. Drain fat if needed.
2. Boil potatoes in water.
3. Add veggies to beef with water, salt, pepper and thyme. Sprinkle flour on top. (This forms a gravy with pan juices) Cover and allow to simmer/cook for about 30 minutes.
4. When potatoes are cooked drain water and mash with softened butter and milk. Use your preferred method to mashing. Hand smasher or mixer. Fold egg into potatoes when done.
5. Top meat mixture with mashed potatoes. Bake at 350 for about 30-45 minutes.
6. Top with cheese and bake additional 5-10 minutes or until cheese is melted.

All Natural Pimento Cheese

8 oz block of all natural sharp cheddar cheese grated
8 oz block of all natural medium cheddar cheese grated
4 oz jar pimentos drained...
1/2 cup organic plain Greek yogurt
1 fresh garlic clove finely chopped
1 tsp of dill
2 tsp all natural apple cider vinegar
Himalayan salt to taste

Mix all together and refrigerate for a few hours before serving.

I like to omit the dill and use a block of pepper jack cheese sometimes for a little spice.

Homemade Caesar Dressing Pasta Salad

If this salad is wrong. I never want to be right. The only way if would have been any more delicious, is if I had some grilled protein on top. (Shrimp, chicken, salmon). But because it was a total last minute, I have no dinner planned meal, this was it.

3 whole garlic cloves...
3 anchovy filets. (Wild caught in olive oil)
1 cup olive oil
1 tbsp Braggs apple cider vinegar
2 tsp Dijon mustard
1/2 tsp Himalayan salt
Fresh ground pepper to taste



Put in food processor and mix for 5-10 minutes till all chopped and mixed. Chill before serving.
I chopped romaine lettuce, added whole wheat organic pasta, cherry tomatoes, freshly grated Parmesan cheese and pepper with Caesar dressing. Yummo.

Tropical Oatmeal Smoothie

Oatmeal is a staple at our house. Someone is eating some kind of oats everyday. And why not? It's full of fiber, stabilizes blood sugar, tastes good, full of antioxidants, iron and there are tons of ways to eat oatmeal.

One of the ways we love it is to throw in our smoothies. This was today's.

Tropical Oatmeal Chia...

1/2 organic yogurt ( I use my homemade)
1/2 cup ice
1 banana
1 clementine
1/4 cup fresh pineapple
1/4 cup raw old fashioned oatmeal
1 tbsp chia seeds

Throw in blender till smooth.

Cream of Tortellini Soup





Praise The Lord for rain, eucalyptus and clove oil and a bowl of warm yummy soup. Our heads are full of the yellow/green pollen haze that occupies the sky right now.

Cream of Tortellini Soup

1/2 lb all natural sausage...
2 fresh garlic cloves chopped
1 can all natural diced tomatoes
1 can organic white kidney beans (drained and rinsed)
5 cups water
1/2 cup organic half and half
1 pkg whole wheat organic cheese tortellini
2 cups of fresh baby spinach or baby kale
1 tsp oregano
1 tsp basil
1 tsp Himalayan salt

1. Brown sausage with garlic and herbs.
2. Add water, salt, tomatoes, beans, and half and half. Bring to boil and simmer 15-20 minutes.
3. When boiling add tortellini and spinach. Cook according to pasta package.
4. Serve with fresh grated parmesan cheese.

Brussel Sprout Salad with Apples and Roasted Cauliflower

Brussels sprout salad has become one of my favorites lately. This one was perfect. Especially with the enormous pork chop my husband brought home from the butcher.

Brussels Sprout Salad with Apples and Roasted Cauliflower

1 1/2 lbs of brussels sprouts...
1 cup cauliflower
1 apple
5 pieces all natural bacon
2 tbsp olive oil
1 tbsp grainy mustard
2 tbsp local honey
2 tbsp apple cider vinegar
Himalayan salt to taste

1. Cut ends off brussels spouts and remove any brown leaves. Finely chop or pulse in food processor till shredded. Chop apple and mix with brussels sprouts.
2. Chop cauliflower and drizzle with olive oil and salt. Roast at 400 till crispy.
3. Chop bacon and cook till brown. When done add 1 tbsp olive oil, apple cider vinegar, honey, mustard to pan with bacon and grease.
4. Add cooled cauliflower to brussels sprouts and apples. Toss with bacon vinaigrette . Serve immediately.

Bruschetta

Baby spinach, left over grilled chicken, fresh mozzarella, avocado and homemade bruschetta.

5 tomatoes (I like to use cherry tomatoes but didn't have any)...
3 fresh garlic cloves
1 cup fresh basil
1/8 cup fresh parsley
1 tbsp olive oil
2 tsp balsamic vinegar
A few shakes of red pepper flakes
Himalayan salt to taste

1. Pulse in food processor or finely chop tomatoes, basil, parsley and garlic.
2. Mix with other ingredients and chill before serving.
