Whole Grain Banana Strawberry Coconut Chia Bread
1 cup strawberries finely chopped or pulsed in food processor
1 banana...
1/2 cup unsweetened shredded coconut
2 tbsp chia seeds
1 free range egg
1/4 cup organic plain Greek yogurt
1 3/4 cup whole wheat flour
2 tbsp softened organic butter or coconut oil
1/3 cup local honey
2 tsp pure vanilla extract
1 tsp baking soda
1 tsp baking powder
1/2 tsp Himalayan salt (optional)
Beat all ingredients together and pour in a greased loaf pan. Bake at 350 for 30-45 minutes or till done.
