These brownies make EVERYTHING better. They are fluffy and rich, which sometimes is hard to achieve with almond flour!
1/2 cup almond flour
1 tbsp. coconut flour
1/3 cup organic softened butter or coconut oil
3 free range eggs
1 tsp pure vanilla extract
3/4 cup cocoa powder
1 cup coconut sugar
1/2 tsp baking soda
1/3 cup dark chocolate chips
(nuts if you would like and top with a little organic powdered sugar when cooled)
1. Whip butter, sugar, vanilla and eggs together.
2. Slowly add flours, cocoa, and baking soda.
3. Fold in the chocolate chips.
4. Pour in a greased 8 x 8 or equivalent pan.
5. Bake at 350 for approx. 35-45 minutes.
6. Allow to cool before cutting.

Chewy Gluten Free Oatmeal Dark Chocolate Chip Cookies
Some days just call for treats! And these made everyone VERY happy! Oat floor is very simple to make and when using gluten free it will obviously makes a great gluten free sweet!
3 cups gluten free oats
1 free range egg
1/2 cup coconut sugar
2 tbsp local honey
1 tsp pure vanilla extract
1 stick organic unsalted butter
1/2 tsp baking soda
1 cup dark chocolate chips
1/2 tsp Himalayan salt
1. In food processor or vitamix, pulse 2 cups of oats till a consistency of flour is formed.
2. In stand mixer, whip softened butter with sugar, honey and vanila. Beat till fluffy.
3. Add baking soda, salt and slowly add oat flour.
4. Add remainder of oats and chocolate and fold in with spatula.
5. Dallop a spoon full of dough onto a ungreased cookie sheet and bake at 325 till slightly brown on bottom. About 12 minutes.
Makes about 30 cookies.

Whipped Coconut Cream
YES! This is every bit as yummy as whipping cream but absolutely not the same to your bottom.
1 can organic coconut milk
3-4 tbsp stevia in the raw or sugar. Use your preference. Stevia just keeps it very low calorie.
1 1/2 tsp pure vanilla extract
Allow the can of coconut milk to refrigerate for 24 hours. When you open, the top with be hard and separated from the water at bottom. With a spatula, take hardened layer out and place in your bowl. Leave the water for later use in a yummy smoothie. Add stevia and vanilla and whip just like you would heavy whipping cream on a high speed. ENJOY!

Peanut Butter Dark Chocolate Whole Wheat with Flax Cookies
These went down tonight. They were as easy to make as they were to consume.
1/2 cup softened organic butter
1 free range egg
1/2 cup all natural peanut butter
1/4 cup coconut sugar or cane sugar
1/4 cup local honey
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pure vanilla extract
1 cup stone ground wheat flour
3 tbsp flax meal
1/2-1 cup dark chocolate chips
1. Whip butter, egg, sugar, honey and vanilla. Slowly add flour, baking soda, baking powder and flax.
2. Fold in chocolate chips.
3. Place a tbsp on ungreased cookie sheet and bake at 350 about 10-15 minutes.

Dark Chocolate Almond Pie
Have I mentioned my love for almonds and dark chocolate? One tiny slice is ALL that you need. I made my almond meal crust. Baked till slightly brown. Then poured the chocolate into the crust. Chill for 4-6 hours before serving.

The almond meal crust was the perfect accessory. For the filling I used my strawberry chia seed jam. Layer strawberries with jam and serve with some fresh whipped cream sweetened with honey.

Carmel Sauce
I am usually not a huge carmel fan. I like it mixed with other things but not just carmel.
This I could drink.
We had baked apples with dinner so in a desperate need of a sweet, I topped plain organic Greek yogurt with the baked apples ...and drizzled the hot carmel sauce on top. It was amazing.
The possibilities are endless to what can be topped with this deliciousness. And not mention how much better than the store bought. My mouth waters thinking about a fresh honey crisp apple dipped in this.

Dark Chocloate Almond Melts
About this time every night. When babies are put to bed. And I am trying to settle in for the night. It never fails. I get a sweet tooth. My go to is usually a few dark chocolate chips with some plain almonds. But tonight I got fancy. Melte...d some dark chocolate chips (1 cup) with coconut oil (2 tbsp). Let it sit for a bit to solidify back up then drizzled on top of plain almonds on parchment paper. Sprinkled some with organic unsweetened dried coconut and some with a little sea salt. Put in fridge to harden. Then they peel right up. (Makes about a dozen) Husband and wife approved
