Mexican Pork Butt

Never. I mean NEVER. Allow your husband to go to Costco by himself. He will come home with enough meat to feed a family of 115. Which I did by the way meet someone the other day who had 115 grandchildren. Not including great. I haven't been... able to quit thinking about it. He was Amish. But that is beside the point.

After he smoked about 10 pork butts, I have had to make other things with the meat. Tonight's was Mexican Pork. I put in a crock pot and heated on low with homemade taco seasoning and homemade salsa with water. We made quesadillas, tacos and I had a salad.

Lots of purple cabbage in my produce box. Sliced it very thin. Topped with pork, avocado, black beans with corn, sweet peppers, cilantro, homemade salsa, plain organic Greek yogurt and some honey lime dressing (3 tbsp olive oil, juice of one lime, 1 tbsp local honey and Himalayan salt).

Applesauce Muffins

Have you made the apple cider? If so this is a great recipe to use the apples than you strained off the top! With just a few ingredients, turn that applesauce into a super easy breakfast or snack.

Applesauce Muffins

1 stick of softened o...rganic butter
2 eggs
1/3 cup local honey
3/4 cup applesauce (if no seasoned add 1/2 tsp cinnamon)
1 tsp baking powder
1 tsp pure vanilla extract
1 3/4 cup whole wheat flour
(Nuts or finely chopped apples optional)

I topped mine with a butter, cinnamon, cane sugar drizzle when slightly cooled after baking)

Mix all ingredients and bake at 350 for about 20 minutes.

Broccoli Casserole

Eat your broccoli. Eat your broccoli. EAT YOUR BROCCOLI.

For some it's a act of congress. Help ease the pain with this easy and flavorful broccoli dish.

1 bunch (3 small heads) of broccoli
1 cup plain organic Greek yogurt...
1 cup freshly shredded sharp cheddar cheese
1 free range egg
1 small sweet onion
1 fresh garlic clove
1 tbsp olive oil
2 tbsp organic butter
Himalayan salt to taste

1. In food processor pulse raw broccoli till desired consistency. I like finely ground.
2. In sauté pan. Heat oil and add chopped onion and minced garlic. Cook till tender.
3. Mix broccoli with cooked onions and all other ingredients but butter.
4. Grease a baking pan and pour broccoli mixture in. Top with melted butter.
5. Bake at 350 for 30 minutes.

Carmel Oatmeal

With less than a teaspoon of homemade carmel sauce, my oats were taken to the next level.

Oatmeal, fresh apple, cinnamon, nutmeg, homemade carmel sauce, raw goats milk.

Roasted Cream of Tomato Soup

Maybe you have a few tomatoes left in your garden? Or maybe you can get a few more at the farmers market? Either way. Make this with fresh tomatoes and enjoy it with a hot grilled cheese this rainy weekend!

Roast Cream of Tomato Soup

12 w...hole fresh tomatoes quartered
2 tbsp olive oil
1 cup fresh basil leaves
2 cups of homemade or free range chicken stock or vegetable stock
1/2 cup organic half and half
4 fresh garlic cloves minced
1 tbsp local honey
Himalayan salt and pepper
(If feeling spicy add a few hot pepper flakes)

1. Season quartered tomatoes with salt and pepper. Drizzle with olive oil and roast at 425 till slightly crispy. About 20-25 minutes.
2. In a large stock pot sauté garlic in olive oil till tender.
3. Add tomatoes and juices to garlic.
4. Add stock to pot. Cover and simmer for about 10-15 minutes.
5. Add honey and chopped basil. With a immersion mixer or blender, purée soup.
6. Add cream slowly and season with salt and pepper. Simmer for about 10 minutes.

Garbanzo Bean Salad

Get back on track after a weekend of fun. Make this and eat for lunch or serve on top of grilled chicken for dinner. Easy to pack and would be amazing as a appetizer with some chia chips. Anyway you make it, it will be enjoyed!

Garbanzo Be...an Salad

1 can or box of garbanzo beans rinsed and drained
1 tomato chopped
1 cup fresh baby spinach chopped
1/4 cup feta cheese
1/4 cup fresh basil chopped or a few shakes of dried basil
1 tbsp of fresh oregano chopped or a few shakes of dried oregano
Juice of 1 lemon
1 tbsp olive oil
Himalayan salt and pepper to taste

Toss all together. Chill slightly or eat immediately.

Pumpkin Butter

I am proving the white girl tradition and making all things pumpkin this fall.

All Natural Pumpkin Butter

1 can organic pumpkin purée
1/4 cup all natural apple juice (I used my homemade apple cider)...
1/2 cup local honey
2 tbsp all natural maple syrup
1 tbsp cinnamon
1/2 tsp nutmeg
Juice of 1 lemon (good for preserving)
1 tsp pure vanilla extract
Himalayan salt to taste

Mix all together in pot and simmer on low for about 1-1/2 hours. Store in fridge.

Amazingly good on Ezekiel cinnamon raisin bread/muffin.
