Pumpkin Snickerdoodle Cookies

Pumpkin and Snickerdoodle cookies. An amazing combo perfect for fall!!

1/2 heaping cup organic pumpkin purée
1/2 cup coconut oil
1 stick organic unsalted butter
1 free range egg
1 1/4 cup cane sugar
2 tsp vanilla extract
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 1/2 tsp baking powder
2 1/2 cups whole wheat flour
1/2 tsp Himalayan salt

For rolling:
3 tsp cane sugar
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg

1. Whip softened butter, oil, sugar, egg and vanilla. 
2. Add cinnamon, ginger, nutmeg, salt and baking powder. Slowly add flour. 
3. Refrigerate batter till firm (about 1 hour). 
4. Scoop about a tbsp of batter into a ball and roll in sugar mix. 
5. Bake at 350 for about 10 minutes!

Peanut Butter Dark Chocolate Whole Wheat with Flax Cookies

These went down tonight. They were as easy to make as they were to consume. 

1/2 cup softened organic butter
1 free range egg
1/2 cup all natural peanut butter 
1/4 cup coconut sugar or cane sugar
1/4 cup local honey
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pure vanilla extract
1 cup stone ground wheat flour
3 tbsp flax meal
1/2-1 cup dark chocolate chips

1. Whip butter, egg, sugar, honey and vanilla. Slowly add flour, baking soda, baking powder and flax. 
2. Fold in chocolate chips. 
3. Place a tbsp on ungreased cookie sheet and bake at 350 about 10-15 minutes. 

Makes about 3 dozen.

Chewy Peanut Butter, Chocolate Chip, Oatmeal Cookies

Rainy days call for cookie making. Have I mentioned this family loves peanut butter?

Chewy Peanut Butter, Chocolate Chip, Oatmeal Cookies

1/4 cup organic butter...
1/3 cup organic peanut butter
1/2 cup milk of choice
1/4 cup local honey
1/2 tsp baking soda
1 tsp vanilla extract
1 free range egg
1/2 tsp Himalayan salt
3/4 cup whole wheat flour
1 1/4 cup old fashion oats
1/2 organic semi-sweet chocolate chips

1. Whip together everything but chocolate chips.
2. Stir dough with chips and place on cooking sheet and bake at 350 about 10 minutes.
